Roasted Mustard Brussels Sprouts

Here's what I had for dinner last night.



Katie's Mashed Cauliflower, Roasted Mustard Brussels Sprouts, a spelt grain cutlet and a fresh tomato.



Yumm, I'll be having that for lunch in a few hours!

Roasted Mustard Brussels Sprouts



Ingredients
1 1/4 cup brussels sprouts
1 tsp. mustard
1/3 tsp. balsamic vinegar
1 clove (or more) of garlic, minced
salt and pepper, to taste

1. preheat oven to 375° F
2. cut brussels sprouts in half
3. in a bowl mix all the ingredients, add the brussels sprouts and stir till fully covered
4. leave them in the oven for 15 minutes, turn them and leave them in for another 15 minutes

I've been thinking about preparing Scrambled Tofu tonight so I can have it for lunch tomorrow. But I've been wondering... does Scrambled Tofu still tastes good when it has been heated up in a microwave?

And I made the Banana Split Pudding Brownies from VWAV last night. The most incredible brownies I've ever had!!! I'll take a picture later of the small piece that's left =p

Yum, everything looks great. I love your brussels sprout recipe! It's so simple, but I bet it tastes amazing. I'm not a huge fan of the sprouts, but I would definitely try them like this. =)

So you are going to have ended up providing almost my entire meal for this Saturday. I am making Veganomicon's Sauteed Seitan with Mushrooms and Spinach over Quinoa, and serving it with smashed cauliflower and these roasted brussels sprouts. I'm gonna make Brett (and myself) enjoy brussels sprouts yet.

What type of mustard to you use? Plain yellow or something like spicy brown or dijon?

ANYTHING involving brussels sprouts has VeggieGirl written all over it - I can't go one day without eating 'em! haha. looks heavenly!! oh and I was looking over that Banana Split Pudding Brownies recipe in VwaV - can't wait to see your batch!

Spelt cutlets? I've never heard of it. Do you have the recipe? That looks really yummy and intriguing!

I've fried brussel sprouts before, but they still tasted pretty plain even with dijon and garlic. I think I'm gonna try your recipe. Roasting always tastes better in my opinion, anyway!

I've added Brussels sprouts to my shopping list, because I think your recipe sounds delicious and easy to make. And thanks for alerting me to the cauliflower soup recipe! Anything with cauliflower sounds fantastic to me... except last night I was going to have some mashed cauliflower but discovered that I'd forgotten to put the mustard in-- it did NOT taste good without it :o/

This all looks delicious! What I've found with tofu scramble is if you can dump it back into the pan with a little bit of cooking spray and just kinda move it around for a couple of minutes, it tastes better and holds up better as leftovers, and it takes just as much effort as the microwave!

I totally rediscovered Brussels Sprouts when going vegan, I cannot believe I ever excluded them from my diet.

Aw, I hate it when that happens and one is already eager to dig in.
And yay for sprouts, I totally rediscovered them in the process of becoming vegan.

Traci Anne - Sadly we don't have a stove at work, just a microwave =(

Ruby - That is so true! I love how I almost only eat vegetables now. There are endless options and each one tastes great(most of the time)! Much better than plain pasta with some creamy sauce(although I also like that every once in a while). I have no undertsanding for people who rarely add veggies to their meal though.
